Lauki Raita is a popular Indian yogurt-based side dish seasoned with aromatic spices and cooked with grated bottle gourd (lauki). This cold and refreshing side dish goes well with hot entrees and provides a healthy touch to your eating experience.

Ingredients

1 cup of bottle gourd (Lauki), thickly grated
1 cup of fresh dahi
1 ½ tablespoon of grounded flax seeds (Alsi), roasted
¼ cup of water
½ cup of mint leaves (Pudina), finely chopped
¼ teaspoon of cumin seeds (Jeera), roasted
¼ teaspoon of black salt
½ teaspoon of sugar
Salt to taste

Procedure

Combine bottle gourd (lauki) and water in a pan.
Cover the lid and let it cook for about 5-6 minutes, till the water evaporates.
Keep aside to cool it down.
Then add all the remaining ingredients and mix well.
