Ingredients

2 tablespoon of olive oil
1 big sliced onion
3 minced garlic cloves
2 cup water
4 cup Vegetable broth
2 Big peeled and sliced carrots
2 Celery stalks
1 Big peeled and sliced potato
1 Can (14 oz) chopped tomatoes
1 teaspoon Thyme dried
1 teaspoon Rosemary dried
Salt
Pepper
2 cup Fresh spinach, chopped

Procedure

In a large pot, heat the olive oil over medium heat.
Sauté the onion and garlic for 5 minutes, or until the onion becomes tender and transparent.
To the pot, add the vegetable broth, water, carrots, celery, potato, tomatoes, thyme, and rosemary.
Bring the soup to a boil, then reduce to a low heat and continue to cook for 20-25 minutes, or until the veggies are soft.
Season the soup to taste with salt and pepper
Cook for another 2-3 minutes, or until the spinach has wilted, after adding the chopped spinach.
Serve immediately and enjoy!
