Vegetable stir-fry with grilled paneer is a tasty and filling recipe that blends a range of colorful vegetables with grilled paneer cubes. It's a vegetarian choice that's high in flavor, protein, and a variety of nutrients.
Ingredients 9
- 200 g of paneer (cut into cubes)
- 1 Sliced onion
- 2 Minced garlic cloves
- 2 cup cut mixed veggies (such as carrots, broccoli, bell peppers, and snow peas)
- Salt and Pepper
- 1 tablespoon of soy sauce
- 1 tablespoon of Honey
- 1 teaspoon Cornflour
- Cooked rice
Method
- In a big wok or frying pan, heat the olive oil over high heat.
- Grill the paneer cubes in the pan for 2-3 minutes on each side, or until golden brown. Set aside the paneer after removing it from the pan.
- Stir-fry the onion and garlic for 1-2 minutes, or until the onion is transparent.
- Stir-fry the mixed vegetables in the pan for 3-4 minutes, or until crisp-tender.
- Whisk together the soy sauce, honey, and cornflour in a small bowl until well blended.
- Return the paneer to the pan, and then drizzle the soy sauce mixture over the vegetables and paneer.
- Cook for 1 minute more, or until the sauce thickens and coats the vegetables and paneer.
- Season to taste with salt and pepper.
- Serve immediately with cooked rice on the side.
