Stuffed capsicum, also known as stuffed bell pepper. Stuffed capsicum is a versatile recipe that can be tailored to varied dietary needs. A basic filling includes of cooked rice or quinoa, veggies, protein, and herbs and spices.

Ingredients

3-4 of capsicums
1 cup of carrots, finely chopped
1 cup of cabbage, finely chopped
1 teaspoon of mustard seeds (Sarson/Rai)
1 teaspoon of coriander powder (Dhaniya powder)
1 teaspoon of turmeric powder (Haldi)
2 tablespoon of oil
1-2 of green chilli, chopped
Salt to taste
For garnishing:
3 tablespoon of carrots
3 tablespoon of cabbage

Procedure

Slice off the top of capsicum. Scoop out the inside and make it hollow.
Heat 1 teaspoon of oil in a pan.
Add mustard seeds and allow them to splutter.
Add cabbage and carrots.
Mix well
Sprinkle turmeric powder (haldi), salt, coriander (dhaniya), and chillies.
Mix again.
Cover and let it cook in its steam for about 5 minutes.
Stuff capsicum with the prepared mixture.
Fry them in a tablespoon of oil.
Cover and simmer for 10-12 minutes till the capsicum become tender.
Garnish with carrots and cabbage.
Serve hot.
