Broken wheat, also known as cracked wheat or dalia, is a very nutritious whole grain formed from broken wheat kernels. All of the nutritional benefits of whole wheat are retained in broken wheat, including fiber, vitamins, minerals, and antioxidants.

Ingredients

1 cup of dalia (cracked wheat)
5 cup of milk (if want to prepare in milk) otherwise water
1 tablespoon of brown sugar (Shakar) OR 1 tablespoon jaggery (Gudh) OR ½ cup honey (quantity can vary as per preference)
2 tablespoon of ghee

Procedure

In a pan over medium heat, melt a good quantity of ghee.
Add dalia (broken wheat) to the pan with heated ghee. Cook, stirring regularly, until the dalia turns aromatic and slightly golden brown.
Depending on what you want and the required consistency, add milk or water to the pan with the roasted dalia. The liquid aids in softening and cooking the dalia.
To the mixture, add brown sugar (shakar), jaggery (gudh), or honey. The sweetener you use is determined by your taste preferences and nutritional needs. Each sweetener contributes a distinct flavor element to the meal.
To keep the heat and moisture in, cover the pan with a lid. This enables the dalia to fully cook and absorb the liquid, resulting in a soft and fluffy texture.
Allow the mixture to simmer, stirring occasionally. Stirring keeps the dalia from adhering to the pan's bottom and guarantees even cooking. Cook until most of the liquid has evaporated, which may take 15-20 minutes.
The final dish should have a creamy texture while the dalia grains remain distinct.
