Green moong dal and vegetable idli is a nutritious and tasty variant on the renowned South Indian meal idli. They're a filling and nutritious breakfast full of protein, fiber, and critical elements from the green moong dal and vegetables.

Ingredients

¼ cup of carrot, grated
¼ cup of cabbage, grated
½ teaspoon of fenugreek seeds (Methi dana)
¼ teaspoon of ginger paste
2 tablespoon of coriander (Dhaniya), chopped
1 cup of split green grams (green moong dal)
¼ cup of split black lentils (Urad dal)
Salt as required
¼ teaspoon green chilli paste

Procedure

Combine split green grams (green moong dal), split black lentils (urad dal), and fenugreek seeds (methi dana) in enough water. Soak for 2 hours and drain well.
Blend the mixture with a cup of water till it gets smooth.
Transfer the prepared mixture in a bowl, add salt, and mix well.
Cover it and keep aside for 4 hours to ferment.
Once fermented add ginger paste, green chilli paste, coriander (Dhaniya), and mix well.
Pour in greased idli moulds and steam in a steamer for 12 minutes.
