Ingredients

¼ teaspoon of green chilli, chopped
2 eggs
¼ cup of green onion, chopped
1 teaspoon of minced garlic
¼ cup of tomato, diced
¼ cup of mushroom, diced
¼ cup of capsicum, chopped
1 tablespoon of low-fat sour cream (can substitute with heavy cream)

Procedure

Beat eggs and sour cream together until light and fluffy
In a small non-stick pan over medium heat sauté the onion, garlic, chilli, and tomato just until softened, about 2-3 minutes (add optional ingredients in the same step).
Add whisked eggs.
Cook for about 3 minutes until sides of omelette can be lifted from the pan with a spatula.
Gently flip the omelette and cook for about 1 minute longer.
Gently fold the omelette in half and cook for 30 seconds more on each side.
