Egg toast is a popular and filling breakfast choice that combines the health benefits of eggs with the familiar flavors of toasted bread. Vitamin A, vitamin D, vitamin E, vitamin B12, and numerous B-complex vitamins are also found in eggs.

Ingredients

1 tablespoon of sunflower oil (Soorajmukhi ka tel)
1 garlic clove, sliced
800g can / 4 cups of cherry tomatoes
4 eggs
2 red onions, chopped
1 green chilli, chopped
Brown bread, to serve
Small bunch coriander stalks (dhaniya ke danthal) and leaves chopped separately

Procedure

Heat the oil in a frying pan with a lid.
Cook the onions, chilli, garlic, and coriander stalks (dhaniya ke danthal) for 5 minutes until soft.
Stir in the tomatoes, and simmer for 8-10 minutes.
Using the back of a large spoon, make 4 dips in the sauce, then crack an egg into each one.
Put a lid on the pan, cook over low heat for 6-8 minutes, until the eggs are done to your liking.
Scatter with the coriander leaves (dhaniya) and serve with bread.
