Egg bhurji is a famous Indian dish made with scrambled eggs. It is a savoury and spicy dish that is widely consumed for breakfast or as a quick and fulfilling meal throughout the day. It contains Vitamins B12, D, A, E, and K.

Ingredients

1 tablespoon of olive oil
2 red onions, chopped
1 garlic cloves, chopped
Small bunch coriander stalks (dhaniya ke danthal) and leaves chopped separately
4 cups of cherry tomatoes
4 eggs
Brown bread, to serve

Procedure

Heat the oil in a frying pan with a lid
Cook the onions, chilli, garlic, and coriander stalks (dhaniya ke danthal) for 5 minutes until soft.
Stir in the tomatoes, and simmer for 8-10 minutes.
Using the back of a large spoon, make 4 dips in the sauce, then crack an egg into each one.
Put a lid on the pan, cook over low heat for 6-8 minutes, until the eggs are done to your liking.
Scatter with the coriander leaves (dhaniya) and serve with bread.
