Ingredients

1 large eggplant(baingan)
3 garlic cloves
6 garlic cloves, minced
1 teaspoon of ginger, grated
2 tomatoes finely, chopped
1 medium onion, finely chopped
1 tablespoon of coriander powder
½ teaspoon turmeric powder
3 tablespoon of oil
1 green chilli, chopped
Salt to taste

Procedure

Make slits all over the brinjal using a knife.
Insert garlic cloves in any 3 of the slits
Put it directly on a flame to roast. Keep turning every 8-10 minutes to ensure it is completely cooked.
When it is roasted thoroughly, use tong to lift and cover in a foil.
Once cooled, peel off the skin and chop the roasted garlic.
Transfer to a bowl and mash it.
Heat oil in the pan on a medium flame.
Add garlic, ginger, and green chilli.
Sauté till they start changing colour, for about 2 minutes.
Add onion and cook for 2-3 minutes till they become soft.
Then add tomatoes and mix.
Cook for 5 minutes till tomatoes become soft and oil start oozing out.
Add the mashed roasted brinjal into the pan along with the chopped roasted garlic and mix well.
Also add the coriander powder (dhaniya powder) and salt.
Mix to combine.
Cook the bharta for another 5 minutes on medium-low heat, stirring often.
Stir in the chopped cilantro (dhaniya) and mix.
