Egg Mushroom Omelette
The protein-rich eggs is combined with the earthy flavors of mushrooms in this delightful and healthful dish. This delivers a nutrient to support your general health with its wealth of vitamins such as vitamin A, D, E, B12, and B-complex.
Ingredients 8
- 2 eggs
- ¼ cup of green onion, chopped
- 1 teaspoon of minced garlic
- ¼ cup of tomato, diced
- ¼ cup of mushroom, diced
- ¼ cup of capsicum, chopped
- ¼ teaspoon of green chilli, chopped
- 1 tablespoon of low-fat sour cream (can substitute with heavy cream)
Method
- Beat eggs and sour cream together until light and fluffy
- In a small non-stick pan over medium heat sauté the onion, garlic, chilli, and tomato just until softened, about 2-3 minutes (add optional ingredients in the same step).
- Add whisked eggs.
- Cook for about 3 minutes until sides of omelette can be lifted from the pan with a spatula.
- Gently flip the omelette and cook for about 1 minute longer.
- Gently fold the omelette in half and cook for 30 seconds more on each side.
