Barley khichadi

Ingredients 9
- 1/2 cup of Barley khichadi
- ½ cup of onion, chopped finely
- ½ cup of tomato, finely chopped
- 1 cup of capsicum, chopped
- ½ cup of zucchini (Tori), chopped
- 3 tablespoon of coriander (Dhaniya), chopped
- 2 teaspoon of oil
- 1teaspoon of cumin seeds (Jeera)
- ½ teaspoon of green chillies, finely chopped
Method
- Take 1 ½ cup water and barley in a pressure cooker.
- Pressure cook for 2 whistles.
- Heat oil in a pan, add cumin seeds.
- When the seeds crackle, add onions.
- Cook for 1-2 minutes.
- Add tomato, mix well and cook for a minute.
- Add the vegetables and cook on a medium flame for 2-3 minutes with occasional stirring.
- Add barley, green chillies, and coriander (dhaniya).
- Mix well, cook for 2-3 minutes on a medium flame with occasional stirring.
